Chocolate Chip Oat Cookies

Delicious chunky and chewy chocolate chip oat cookies packed with oats, brown sugar and chocolate chips. They are so easy to make using basic pantry items. They are irresistible and perfect to enjoy as tea time treat or a little snack. You can also use this recipe as a base and add little variations like cinnamon, raisins and nuts of your choice.

HOW TO MAKE CHOC CHIP OAT COOKIES

These Chocolate chip oats cookies are so easy to make, all you need is some pantry staples.

Rolled Oats: Use Rolled or old-fashioned oats are larger and have more “chew” . Quick oats are fine as compared to rolled oats therefore they may not give same texture.

Unsalted butter: Use Unsalted butter and it should be really softened at room temperature. You can also use salted butter, just skip the salt if using that.

Chocolate chips: I used milk chocolate chips. You can swap them with dark chocolate or even mix both. Roughly chopped chocolate chunks can also be used.

Brown Sugar and Caster Sugar – Brown Sugar gives deep flavour to cookies.

Method:

The method is really simple combine butter, sugars and egg. Mix it using hand blender untill creamy. Mix oats, flour, salt and bicarb soda. Combine it with butter mixture. Using a wooden spoon mix untill mixed well. It you want you can use stand mixer will save you heavy work of mixing.

If the mixture is bit soft put it in the fridge for 30 minutes. I have noticed that you need to do this summer. But in winters the dough remains firm. Refrigerating the dough prevents cookies from over spreading and they retain their shape.

Use an ice cream scoop to portion out the cookies, it ensures equal sized cookies and no messy hands. Press them slightly and little extra choc chips can be added to the top.

Make sure to keep an eye out when baking. It should only take 15 minutes or untill the edges are golden and cookie is bit firm. The cookies continues to cook on hot tray when taken out from the oven. It literally takes extra minute or so to change the cookies from being golden brown to dark brown and chocolate chips start to burn. So don’t ever leave them !

This recipe make 18-24 Cookies depending on the size you make. I got 20 cookies out of this recipe.

Tips for perfect Cookies

  • Measure your flour and oats ! Follow the exact measurements given in the recipe.
  • You can add raisins, cranberries and also pinch of cinnamon.
  • Toasted walnuts/hazelnuts make an excellent addition to this cookie.
  • Don’t over bake !The cookies are done when the edges start to brown. And centre will be light golden brown.

Ingredients
  

  • Cup Plain Flour (195g)
  • Cup Rolled Oats (190g)
  • 1 Cup Softened Butter (210g)
  • ½ Cup Caster Sugar (100g)
  • ½ Cup Brown Sugar (90g)
  • 1 cup Chocolate Chips
  • 1 large Egg
  • 1 tsp Baking Soda
  • ¼ tsp Salt

Instructions
 

  • Preheat oven to 180 ° C and prepare a baking tray lined with baking paper.
  • Whisk the flour, oats, baking soda, and salt together in a medium bowl. Set aside.
  • In a large bowl using a hand mixer or a stand mixer fitted with a paddle attachment, beat the butter on medium-high speed until smooth and creamy. Add the brown sugar and granulated sugar and beat on medium-high speed until creamed. Add the egg and beat untill all well combined.
  • Add the dry ingredients and chocolate chips. Mix well using the wooden spoon. If you are using stand mixer complete this step using that.
  • Use a ice cream to scoop the cookie dough, about 3 Tablespoons of dough per cookie, and place 4 inches apart on the baking tray. Slightly flatten it and add extra chocolate chips on the top. Bake for 13-15 minutes or until lightly browned on the sides.
  • Remove from the oven and allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
