Easy Chocolate Chip Cookies

Thick, crunchy and buttery with golden rustic edges, this is my idea of how chocolate chip cookies should be. There seems to be too much fuss about how cookies should be chewy or soft or crunchy on outside chewy on inside. You will find tons of recipes asking to freeze the dough 24 hr, melt the butter, don’t melt the butter, use bicarb or use baking powder. Why not make it simple ? This is the easy chocolate chip cookies recipe. I use this recipe all the time and results are so consistent. I get same crispy, chunky cookies every time with deep rich flavour from brown sugar and they are perfect to be dipped in tea or milk.

Ingredients for Chocolate Chip Cookies

This recipe includes plain flour, softened butter, an egg, caster sugar, brown sugar and chocolate chips. I use more brown sugar and less caster sugar. This gives very deep rich flavour to the cookies and it also give it a darker golden caramel like colour to the cookies. You have a choice with chocolate chips to either use half milk chocolate chips and half dark chocolate or you can just use either of them.

This recipe makes 22 small cookies, if you are making large it would be around 12. I use teaspoon full dough and roll it before pressing it slightly flat. If making large cookies use tablespoon.

Does the dough need to be freezed?

Normally you dont need to freeze the dough for this recipe unless the weather is really hot and dough gets a bit sticky. In that case wrap the dough in the cling and put it in the freezer for 30 minutes.

Also if you want to store the dough for making cookies later you can store the dough for up to a month.

Storing the cookies

Since these cookies are bit firm they stay fresh in the air tight container for up to a week.

Ingredients
  

  • cup Plain Flour
  • 150 g Butter ( Softened)
  • ½ cup Brown Sugar
  • ½ cup Caster Sugar
  • 1 cup Milk Chocolate Chips You can use Dark chocolate chips or mix of both dark and milk chocolate chips.
  • 1 Egg
  • 1 tsp Vanilla Essence.

Instructions
 

  • Preheat oven to 180° C or 160°C Fan forced.
  • In a bowl put butter, brown sugar and caster sugar. Mix using electric beater until well combined.
  • Add the egg and Vanilla essence, continue mixing until creamy mixture forms.
  • Add the flour and mix with wooden spoon until a dough forms. Fold in the chocolate chips.
  • Using teaspoons roll a small ball and place it on a lined tray.
  • Gently press it to make the balls slightly flat.
  • Bake in the oven for 20 minutes until edges start to turn golden.
  • Allow the cookies to cool on the wire rack.
