The best ever, easy soft chewy chocolate chip cookies one bowl recipe without any mixers !

There are thousands of chocolate chip cookies recipes out there. Chilled dough, more white sugar, less brown sugar, extra egg yolk, you name it and everyone swears by their version of chocolate chip cookies. Everyone has their favourite tried and tested recipe, this is mine.

How to make Chewy Chocolate Chip Cookies

This cookie dough is made from standard ingredients. Its the quantity that matters. Melted Butter is key to this recipe. It makes the chewiest cookies. I used unsalted butter. More of brown sugar and less white sugar. Brown sugar gives deep rich taste. Mix melted butter, sugars and egg yolk. After this flour and baking soda and mix until combined. Lastly stir in the chocolate chips. I used mix of dark and milk chocolate chips. You can choose either or chopped chocolate chunks also work well.

Now comes the debatable part, should you chill the dough in freezer or not ? Well i find it better to chill it. Chilling it as little as 20 minutes is also enough. In summers you may want to chill for upto an hour as dough becomes sticky in hot weather.

Using a cookie scoop, scoop out cookies on a tray. Bake until outer corners are done. When you take them out of oven the centers continue to cook.

This cookie dough can easily be frozen! Just roll the cookie dough into balls and put them on a tray. After couple of hours when they are a bit frozen and firm transfer them into a freezer bag. When required bake them straight out of freezer.

Ingredients
  

  • cup Plain Flour
  • ½ cup Melted Unsalted Butter
  • 1 Egg
  • ¾ cup Brown Sugar
  • ½ cup Caster Sugar
  • ¼ tsp Salt
  • 1 tsp Vanilla Extract
  • ½ cup Dark Chocolate Chips
  • ½ cup Milk Chocolate Chips

Instructions
 

  • Preheat oven at 180° C and line a baking tray with baking paper.
  • In a bowl add melted butter, brown sugar, caster sugar and vanilla. Mix it using a whisk. Add egg and continue to mix well until well combined.
  • Add flour, baking soda and salt and mix using a spatula or the wooden spoon. Fold in chocolate chips and put the dough in the freezer for atleast half an hour.
  • Using a cookie dough scoop out cookies and place them on baking tray. Ensure there is enough distance between them to prevent them from sticking together.
  • Bake in the oven for 15 minutes or until outer edges and golden. Cool them on wire rack.
