This lemon loaf cake recipe takes less than 10 minutes to prepare from scratch. It’s perfect for afternoon tea or breakfast as well. You will definitely be making this again and again. Whenever I make this, its doesn’t lasts too long !

Unlike other loaf cakes or pound cakes this lemon loaf cake is very light. The addition of yoghurt and oil along with butter helps make it moist and tender. The sweetness in the cake balances marries beautifully with tanginess of lemon. And do add salt, I believe it enhances the lemon flavour.

Tips For Lemon Loaf Cake

  • Butter should be left to soften at room temperature.  It should leave an indent when pressed with your fingers.
  • Butter, eggs, and yogurt should be at room temperature. This helps the ingredients to cream together and make smooth batter resulting in tender and moist cake crumb.
  • Don’t leave out lemon zest , its essential to lemony flavour of the cake.
  • Use freshly squeezed lemon juice, bottled lemon juice doesn’t work well.
  • Loaf cakes take longer to bake as compared to other cakes. Bake the loaf cake at low temp 160 C fan forced and use lower rack.
  • This recipe can also be baked in a Bundt pan. Make sure to grease your Bundt pan generously so that your cake will come out of the pan.

How to Store Lemon Cake

Leftover loaf cake should be kept in an airtight container. You can leave it out at room temperature for up to 24 hours. Refrigerate and consume within 3-4 days for the best results.

Can I Freeze Lemon Cake?

This lemon loaf cake is perfect for freezing, just leave off the icing glaze. Freeze the cooled loaf in plastic cling wrap or airtight container upto a month. Thaw it and ice it with the glaze when ready to serve.

Lemon Loaf Cake

Ingredients
  

  • 1 ¾ cup Plain Flour
  • 1 tsp Baking Powder
  • ¼ tsp Salt
  • 2 Eggs Room Temperature
  • ½ cup Yoghurt Room Temperature
  • 150 g Unsalted Butter Room Temperature
  • 2 tbsp Lemon Juice
  • 1 tbsp Lemon Zest
  • ¼ cup Cooking Oil

For Lemon Glaze

  • 1 cup Icing Sugar
  • 1 tbsp Lemon Juice

Instructions
 

  • Preheat Oven to 180°C/160°C fan and prepare an 10 inch loaf tin lined with baking paper
  • Using electric beater cream together butter and caster sugar until light and fluffy.
  • Add oil and continue to mix at low speed until mixed well.
  • Add eggs one by one, mixing well after each addition.
  • Add lemon juice and lemon rind, followed by yoghurt. Continue to mix until smooth mixture is formed and all the ingredients are combined well.
  • In a bowl combine plain flour, baking powder and salt. Mix with spoon and add it to wet mixture.
  • Mix well until everything is combined. The batter will be thick but smooth.
  • Pour it in prepared tin and bake in the oven for 45 min to an hour.
  • For Icing : mix icing sugar with lemon juice
  • Allow the cake to cool down slightly and drizzle icing over the cake
