These muffins are made from simple batter with grated apples and topped with sweet crumble. It results in moist and soft muffins with crunchy buttery crumble on the top. And they smell heavenly. The sweet apples combined with hint of cinnamon, ticks all the boxes for indulgent autumn baking.

You will love this recipe as it’s so simple baked using the basic staple ingredients. There is no equipment involved, just a mixing bowl, whisk and spatula!

These muffins are perfect combination of soft moist muffins with grated apples topped with sweet crunchy crumble.

  • Plain Flour – Use plain flour and add baking powder to help muffins rise. You Can also use self raising flour.
  • Vegetable oil – use any neutral tasting oil like vegetable or canola oil.
  • Milk – use full-fat milk for the best result.
  • Egg – use a large egg at room temperature.
  • Caster Sugar- a finely granulated sugar which dissolves well when mixed with other ingredients.
  • Apple – grate the apple with skin. Choose an apple variety that holds its shape when cooked. I like to use Pink Lady apples, it has perfect balance if sweetness and tartness, but such as the sweeter Fuji or granny smith, are suitable to use as well.

For Crumble

  • Plain flour – also known as all-purpose flour.
  • Rolled Oats– they are not same as instant oats. Rolled oats makes nice crunchy crumble.
  • Brown sugar – you can use either regular light brown sugar or dark brown sugar.
  • Butter – Softened at room temperature. You can use either salted or unsalted butter.
  • Ground Cinnamon-cinnamon powders works so well with apples.

How to Make Apple Crumble Muffins

  • Add sugar, oil and eggs. Mix well untill smooth and creamy.
  • Grate apple with skin and add to the mixture.
  • Add flour along with baking powder and milk. Mix using a spatula or wooden spoon.
  • Prepare Crumble – add oats, flour, brown sugar and cinnamon in a bowl. Mix using a spatula and then add butter. Using the fingers or fork combine the ingredients until crumb comes together
  • Spoon the crumbles over the muffins and bake !

This is completely optional. The muffins are perfectly delicious even without it but i think icing makes them look a bit more appeasing.

The icing is very simple, made by 2 ingredients icing sugar and milk. Combine them and drizzle over cooled muffins.

  • Make sure milk, butter and eggs, are at room temperature. This helps the ingredients to mix well.
  • Avoid over mixing the batter and mix it gently.
  • For best results bake the muffins initially at high temperature for 5 minutes and then reduce the temperature. This helps them to rise quickly and then later they continue to bake inside.

There is no particular apples recommended for this recipe. I think its always best to us ethe apple that you love to eat. I like Pink Lady as they are juicy and sweet with hint of tartness that complements the sweetness from muffins. I use the same apples for Apple Turnovers and Apple Crumble.

You can use granny smith, royal gala or fuji apple, as long as it’s not a soft variety of apple it should be fine.

Ingredients
  

  • cup Plain Flour
  • ½ cup Cooking Oil
  • ½ cup Caster Sugar
  • 1 Egg ( At room Temperature)
  • ½ cup Milk
  • 1 Large Apple Grated with Skin
  • 1 Tsp Baking Powder

For Crumble

  • ½ cup Plain Flour
  • 1 cup Rolled Oats
  • 50 g Softened Butter
  • ¼ tsp Cinnamon Powder
  • ½ cup Brown Sugar

Icing ( Optional)

  • ½ cup Icing Sugar
  • 2 tbsp Milk

Instructions
 

  • Preheat oven to 200 ℃ and line a muffin tray with muffin cases.
  • In a mixing bowl add oil and caster sugar. Whisk it together untill combined.
  • Add egg and continue to mix until the mixture is creamy.
  • Grate an apple with skin and add it to the mixture.
  • Add flour, baking powder and pour the milk over. Using a spatula gently mix it until batter is formed.
  • Pour mixture into the muffin cases filling it to almost full.
  • Prepare crumble in a bowl by mixing flour, oats, brown sugar and cinnamon powder. Add softened butter and using hands or fork combine the ingredients until combined.
  • To the muffins with tablespoon full of crumble and gently press it .
  • Bake at 200℃ for 5 minutes and then reduce the temperature to 160℃ for remaining 15 minutes or until skewer comes out clean.
  • Allow muffins to cool down on the wire rack.
  • While Muffins are cooling off, prepare glaze. Add icing sugar in bowl along with milk. Mix it well untill its smooth. Drizzle over the muffins.
