Preheat oven to 180 ° C and prepare a baking tray lined with baking paper.
Whisk the flour, oats, baking soda, and salt together in a medium bowl. Set aside.
In a large bowl using a hand mixer or a stand mixer fitted with a paddle attachment, beat the butter on medium-high speed until smooth and creamy. Add the brown sugar and granulated sugar and beat on medium-high speed until creamed. Add the egg and beat untill all well combined.
Add the dry ingredients and chocolate chips. Mix well using the wooden spoon. If you are using stand mixer complete this step using that.
Use a ice cream to scoop the cookie dough, about 3 Tablespoons of dough per cookie, and place 4 inches apart on the baking tray. Slightly flatten it and add extra chocolate chips on the top. Bake for 13-15 minutes or until lightly browned on the sides.
Remove from the oven and allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
