French Almond Cake

Deliciously moist crumb with hint of citrus, this French Almond cake is a fuss free recipe all done in one mixing bowl.

This simple cake is delectable blend of flavors. The nuttiness of almonds, hint of citrus and creamy yoghurt come together to make this moist cake. You don’t need mixer, it’s an easy one bowl recipe.

Its perfect for breakfast alongside a warm cup of tea/coffee, but it can also be enjoyed for dessert.

I love French cakes; they have a beautiful moist crumb. The yoghurt and oil makes the cake so fluffy moist, it remains fresh even after couple of days. I am quite obsessed with French Almond Cake and French Orange Yoghurt Cake ,

This Cake require basic pantry ingredients

  • Plain/All Purpose Flour
  • Almond Flour – not almond meal.
  • Caster Sugar
  • Melted Butter – use unsalted butter
  • Cooking Oil – use any neutral tasting oil like vegetable oil, canola or sunflower.
  • Plain Yoghurt – preferably greek yoghurt
  • Eggs – large eggs at room temperature.
  • Citrus orange or Lemon – depending on the season you can choose either. I prefer orange for this recipe. You will need zest and little bit of juice.
  • Almond Flakes – thin flakes of almond to sprinkle on the top.

French Almond Cake
  • Combine melted butter, oil, sugar and eggs and whisk them well.
  • Sift flour and baking powder and add it to the mixture along with almond flour.
  • Add orange zest and orange juice. Combine untill mixture is smooth.
  • Pour the mixture in lined tin and top it with flaked almonds.
  • Bake until skewer comes out clean or with a moist crumb.

Almond meal is made from raw unpeeled almonds. Its easily available in supermarkets but you can also make your own. Simply blitz raw unpeeled almonds in a blender until it becomes fine powder.

Ingredients
  

  • Cup Plain Flour
  • ¾ Cup Almond Flour
  • 50 g Butter
  • ½ Cup Cooking Oil
  • 1 Cup Caster Sugar
  • tsp Baking Powder
  • 2 Eggs
  • ¾ Cup Plain Yoghurt
  • 2 tbsp Orange Juice
  • Orange Zest
  • 1 tsp Vanilla Extract

Instructions
 

  • Preheat oven to 170℃ and prepare a 9 inch round tin greased and lined with baking paper.
  • Melt the butter in micorwave and add to a mixing bowl. Add cooking oil and caster sugar. Mix well using a whisk.
  • Add one egg at a time and mix well after each addition. Add vanilla essence as well.
  • Sift flour and baking powder. Add it to the mixture along with almond flour, orange zest and orange juice. Mix well using a spatula until its all combined.
  • Pour the mixture in the prepared tin. sprinkle the flaked almonds over. Bake for 45 mins or untill the skewer comes out clean. During baking if the almonds start getting brown cover the tin with foil loosely.
