Chicken Taco Seasoning

Ditch the store-bought seasoning packets. With just a few pantry staples you can create your own taco seasoning. Made with cumin powder, paprika, black pepper and oregano, the same taco seasoning I use for Chicken Fajitas. I also add crushed chilli flakes for bit of spice, its optional for you.

WHAT IS Pico de Gallo ?

Pico de Gallo, a vibrant and essential component of any authentic taco, is a celebration of fresh ingredients coming together. This zesty salsa combines diced tomatoes, finely chopped onions, fiery jalapenos, aromatic cilantro, and a generous squeeze of lime juice. The result is a burst of tanginess, crunch, and a hint of heat that perfectly complements the grilled chicken in your tacos.

This Mexican salsa that can also be served with pretty much anything – tacos, burritos, enchiladas, quesadillas, nachos.

How To Make Grilled Chicken Tacos

  1. Prepping the Chicken: Rub the chicken with taco seasoning, oil, and lime juice for thorough coating.
  2. Grilling the Chicken: Grill the chicken in a pan until cooked to perfection.
  3. Creating Pico de Gallo: While chicken cooks, prepare the zesty Pico de Gallo.
  4. Assembly: Slice the cooked chicken into small cubes and assemble tacos with tortillas, chicken, avocado, sour cream, and cilantro.

What types of tortillas should I use? 

You can choose plain flour tortillas or corn tortillas. Which ever tortillas you use, remember to toast them. Its gives nice colour but also makes them easy to fold and hold the filling.

Additional Toppings

There are many additional toppings you can choose depending on your personal preferences.

  • Lettuce – Use Shredded romaine or iceberg lettuce.
  • Sweet Corn
  • Black beans
  • Although not authentic, cheese can also be added. You can use shredded cheddar cheese or crumbed feta too.
  • If you like them spicy add some jalapeños.

Making Chicken Tacos Ahead

You can marinate chicken ahead and keep it in fridge for upto 24 hours. The cooked chicken can also be refrigerated for 2-3 days. Reheat in a pan or microwave before serving.

You can also make Pico de Gallo ahead but don’t add lime juice and salt until ready to serve as it gets watery.

Quick Chicken Tacos

Ingredients
  

  • 700 g Chicken Fillets
  • 8 Tortillas
  • 2 tbsp Lime Juice
  • 4 tbsp Oil

Taco Seasoning

  • 1 tsp Salt
  • 2 tsp Oregano
  • 2 teaspoon Cumin powder
  • ¼ tsp Black Pepper
  • 1 tsp Paprika
  • 1 tsp Crushed red chilli/Chilli flakes Optional

Pico de Gallo

  • 2 Tomatoes
  • ½ Onion
  • 2 tbsp Coriander/Cilantro
  • 2 tbsp Lime Juice
  • Salt to taste
  • Jalapeños Optional

To Serve

  • Avocado
  • Sour Cream
  • Lime wedges
  • Cilantro/Coriander

Instructions
 

  • Add Mexican seasoning, oil and lime juice into chicken and rub it onto the chicken. Ensure that the chicken is coated well with spice mix.
  • Heat a pan and drizzle some oil. Grill chicken while turning on each side. The chicken should be thoroughly cooked.
  • While chicken is cooking prepare Pico de Gallo. Remove seeds from tomatoes and chop them. Finely chop onions and cilantro/coriander. Mix them all together. dress it with lime juice and salt.
  • When chicken is cooked through take it out and cover with foil for few minutes. Cut it into stipes. You can also dice it.
  • Heat Tortillas in a pan. To assemble fold tortillas in half, add chicken, top it with pico de gallo, diced avocado and spoonful of sour cream.
