Ingredients for Black Pepper Chicken

This is one of those recipes that uses simple and basic ingredients which are usually available in your pantry and refrigerator.

  • Chicken: You’ll need boneless, skinless chicken breasts or thigh fillets. Cut into thinly slices.
  • Onions: White onion, sliced.
  • Capsicum/Bell Pepper: I like to use red and green both. You can choose either depending on the availability.
  • Ginger & garlic: Fresh ginger and garlic, finely chopped. They are essentials of making fragrant and flavourful stir fry.
  • Sauces: You will need light soya sauce and dark soya sauce. You can substitute dark soya sauce with oyster sauce as well.
  • Chicken Stock: makes the sauce ! you can use vegetable stock as well.
  • Corn flour: is used for marinating chicken and also in the sauce. It gives light golden crust on the chicken and thickens the sauce.
  • Black Pepper – used cracked black pepper not black pepper powder.
  • Brown Sugar – gives depth and flavour to the sauce. It also balances the salt from the sauce.

How To Make Black Pepper Chicken

They key to make a good stir fry is to make sure you have prepared the ingredients before you start cooking. Cut the vegetables, prepare the sauce, and marinate the chicken beforehand. This is prevents chicken and peppers from being overcooked and dry.

Marinate Chicken – Cut chicken thinly and marinate with soya sauce and corn flour. Set aside.

Cut Vegetables – thinly slice capsicums and onions. Chop garlic and ginger very finely.

Prepare the sauce – mix chicken stock, soya sauce, dark soya sauce, brown sugar, black pepper, salt and corn flour

Once all ingredients are heat a wok or pan on high heat. Add little oil and add chicken in a single layer. Allow it to sear and then turn on other side. Avoid overlapping chicken. You can always cook chicken in 2 batches. Take chicken out once cooked.

In the same pan add more oil and fry garlic and ginger for a minute. Add capsicums and onions, fry for couple of minutes and pour the sauce in. Lastly add chicken and mix so the sauce coats everything.

  • Avoid over cooking the chicken. Once it sears nicely on both sides and its just done, take it out. It will continue to cook again when added back with vegetables and sauce.

Black Pepper Chicken can be served by itself or over steamed rice. You can also use steamed brown rice or cauliflower rice for low carb option. Leftovers can be stored in an airtight container in the refrigerator for 3 to 4 days.

Ingredients
  

  • 700 g Chicken thinly sliced See notes
  • 3 tbsp Sesame oil

Sauce

  • ½ cup Chicken Stock
  • 2 tbsp Soya Sauce
  • 2 tbsp Dark Soya sauce
  • 1 tbsp Brown Sugar
  • 1 tsp Cracked Black Pepper
  • 2 tbsp Corn flour
  • Salt to taste

Chicken Marinade

  • 1 tbsp Soya Sauce
  • 1 tbsp Corn Flour

Vegetables

  • 3-4 Garlic Cloves finely Chopped
  • 1 tbsp Ginger Finely Chopped
  • 2 Medium Capsicums/Bell Peppers Sliced Either red, green or both
  • 1 Medium Onion Sliced

Instructions
 

  • In a mixing bowl add chicken with soya sauce and corn starch. Gently mix and allow it to marinate for few minutes until you prepare vegetables and sauce.
  • Slice onions and capsicums. Finely chop garlic and ginger.
  • In a small bowl add all the ingredients of sauce and stir to combine.
  • In a skillet heat 2 tbsp of oil and add chicken in a single layer. Avoid over lapping. After 30 seconds flip chicken over. Stir and cook for a minute until chicken is lightly browned. Take chicken out in a plate and set aside.
  • In the same skillet add 1 tablespoon oil and fry ginger garlic for few seconds and immediately add capsicums and onion. Stir fry for a minute.
  • Pour the sauce in a mix until sauce starts to thicken up. Add chicken back in the skillet. Stir to ensure that the sauce coats everything.
  • Serve immediately.
