These Chicken Fajitas are a staple in my house because they’re the fastest way I know to get a solid, flavorful meal on the table with minimum prep. I make them regularly—usually on those nights when I need a 30-minute win that everyone will actually eat.
You don’t need a long list of ingredients for this. It’s just a simple homemade seasoning and fresh peppers. No complicated steps here—just seasoned chicken and crisp veggies that still have some crunch left in them.

INGREDIENTS FOR CHICKEN FAJITAS
For these fajitas, I usually use boneless chicken breast, but thigh fillets work just as well if you prefer juicier meat. You’ll also need a mix of colorful capsicums (bell peppers) and sliced onions.
Homemade Fajita Seasoning
I stopped buying store-bought packets years ago. Making your own seasoning is so easy, its tastes better and of course its all preservative free. I usually mix up a big batch of this and keep it in a jar for quick dinners.
- Ground Cumin
- Paprika
- Salt
- Chilli Flakes
- Blackpepper

STEP BY STEP – CHICKEN FAJITAS
- Season the chicken. Sprinkle the fajita seasoning on chicken strips along with some lime juice and olive oil. Marinate for few minutes. While the chicken is marinating cut the onions and capsicums.
- Cook the chicken. Heat a large skillet over medium heat and drizzle some olive oil or any other neutral tasting oil. Cook until chicken is cooked and gets nice colour. Take it out and cover it with foil.
- Sauté the bell peppers and onion. Sauté them in the same skillet over medium heat for a few minutes until caramelized.
- Cut the Chicken – thinly slice the chicken into strips.
- Wrap it up. Serve immediately with tortillas and extra toppings of your choice.

Serving Suggestion for Chicken Fajitas
These are great straight out of the pan, but the toppings are where you can really customize things. I usually put out small bowls of sour cream, shredded cheese, and fresh jalapeños so everyone can build their own.
Want to skip the tortillas?
Low-Carb Option: If I’m looking for something lighter, I’ll skip the grains entirely and toss everything over a big bed of greens with extra avocado for a quick fajita salad.
Fajita Bowls: This is my favorite way to eat leftovers. Serve the chicken and peppers over a bed of cilantro-lime rice with black beans and corn.

Can you prepare Chicken Fajitas Ahead?
Yes! This is actually one of my favorite meals to prep when I know I have a busy week. You have two ways to do it:
- The Fresh Method (Best Flavor): You can marinate the chicken and slice the peppers and onions up to 24 hours in advance. Store them in separate containers in the fridge, then just toss them in the pan when you’re ready to eat. You get a fresh, sizzling dinner in 10 minutes.
- The Meal Prep Method: If you’ve already cooked everything, store the leftovers in an airtight container in the fridge for 3 to 4 days.
My Reheating Tip: To keep the chicken from getting rubbery in the microwave, add a tiny splash of water or a squeeze of lime juice before heating. It creates a bit of steam that keeps the meat tender!

Easy Chicken Fajitas – 30 Minute Meal
Ingredients
- 800 g Chicken breast Fillets
- 2-3 Capsicum ( Bell Pepper) Green, red or yellow
- 1 Onion
- 1 tsp Salt
- ½ tsp Chilli Flakes
- 1 tsp Paprika
- 1½ tsp Cumin Powder
- ¼ tsp Black pepper
- 2 tbsp Lime Juice
- 2 tbsp Oil
- 2 Cloves Garlic
- Tortillas to serve
- Sour Cream, avocado and Jalapeños Optional
Instructions
- Cut chicken breast fillets horizontally to spilt them. Add spices along with, minced garlic, lime juice and 1 tbsp oil. Mix well and set aside.
- Thinly slice capsicums and onions.
- Heat the remaining oil in a pan or skillet. Add chicken and cook until fully chicken is fully done.
- Take the chicken out and cover it will foil. Add capsicums and onions in the same pan. Toss them around on high heat until they get nice colour and char.
- Mix chicken along with onions and peppers . Drizzle some lime juice over.
- Serve on warm tortillas with spoonful of sour cream, avacados and jalapenos. Or choose from your favourite toppings.
