Chicken Fajitas

A classic Mexican recipe, Chicken Fajitas - seasoned chicken and tossed with sautéed bell peppers (capsicum) and onions, served with warm tortillas.

Ingredients
  

  • 500 g Boneless Chicken
  • 2-3 Capsicum ( Bell Pepper) Green, red or yellow
  • 1 Onion
  • 1 tsp Salt
  • 1 tsp Red Chilli Powder or Crushed red chilli
  • ½ tsp Paprika
  • 1 tsp Cumin Powder
  • ¼ tsp Black pepper
  • 1 tsp Oregano
  • 3 tbsp Lemon Juice
  • 2 tbsp Oil
  • Tortillas to serve
  • Sour Cream, avocadoes and Jalapeños Optional

Instructions
 

  • Mix all spices together to make fajita seasoning.
  • Cut chicken in strips and add spices along with 2 tbsp of lemon juice. Mix and set aside.
  • Thinly slice capsicums and onions.
  • heat oil in a pan or skillet. Add chicken and cook while turning it over regularly.
  • Move chicken to the side and add little more oil on empty side . Add capsicums and onions. Sautee them. ( if your skillet is small, take chicken out and then Sautee peppers)
  • Mix chicken along with onions and peppers . Add the remaining 1 tbsp of lemon juice.
  • Serve on warm tortillas with spoonful of sour cream and jalapenos. Or choose from your favourite toppings.
