Chicken Fajitas
A classic Mexican recipe, Chicken Fajitas - seasoned chicken and tossed with sautéed bell peppers (capsicum) and onions, served with warm tortillas.

- 500 g Boneless Chicken
- 2-3 Capsicum ( Bell Pepper) Green, red or yellow
- 1 Onion
- 1 tsp Salt
- 1 tsp Red Chilli Powder or Crushed red chilli
- ½ tsp Paprika
- 1 tsp Cumin Powder
- ¼ tsp Black pepper
- 1 tsp Oregano
- 3 tbsp Lemon Juice
- 2 tbsp Oil
- Tortillas to serve
- Sour Cream, avocadoes and Jalapeños Optional
Mix all spices together to make fajita seasoning.
Cut chicken in strips and add spices along with 2 tbsp of lemon juice. Mix and set aside.
Thinly slice capsicums and onions.
heat oil in a pan or skillet. Add chicken and cook while turning it over regularly.
Move chicken to the side and add little more oil on empty side . Add capsicums and onions. Sautee them. ( if your skillet is small, take chicken out and then Sautee peppers)
Mix chicken along with onions and peppers . Add the remaining 1 tbsp of lemon juice.
Serve on warm tortillas with spoonful of sour cream and jalapenos. Or choose from your favourite toppings.
