Chicken Nachos

Corn chips loaded with Mexican spiced chicken, melted cheese and beans, topped with jalapeños, olives, onions and tomatoes and avocados. Serve it with guacamole and sour cream

Many think of ground beef when it comes to nachos but chicken nachos are equally good ! This mouth-watering recipe is incredibly simple to make. They are great for party appetizer, game night food or even a quick weeknight meal. And the great thing its got all, the veggies, proteins and carbs all topped with cheese, what’s not to love about nachos !

Its one of the fuss free recipes that doesnt require any measuring cups/spoons and also there is no strict list of ingroednts that you should stick to. I have listed all the possible subsitute and add ons. Feel free to tweak it and make your own signature nachos.

Nacho Chips – the chips used for nachos are tortilla chips also known as corn chips.

Cheese – You can choose any cheese Colby, Monterey jack, cheddar. If you are using Mozzarella combine it with cheddar.

Protein – for this recipe i have used chicken which is very thinly cut. You can also cook big chunks and shredded them. If you want to make it vegetarian, you can completely skip the meat.

Beans – Use mexican beans or refried beans. You can also use black beans.

Spices – I used paprika, garlic powder, cumin powder, oregano, onion powder, black pepper and salt. You can also use store bought mexican seasoning.

TOPPINGS FOR NACHOS

Below are the some toppings for nachos, feel free to add whatever you like

  • Sour Cream
  • Guacamole or diced avocado
  • Salsa (canned, fresh, or pico de gallo)
  • Freshly chopped Coriander/cilantro
  • Sliced black olives
  • Fresh or pickled jalapeños
  • Diced red onion
  • Sliced green onions
  • Corn (frozen or canned)

Assembling Nachos

I used a sheet pan for assembling and serving the nachos. You can use any oven proof tray or dish. Evenly spread a layer of corn chips, top it with cheese, followed by chicken and beans. Repeat with another layer. Add the toppings, I used onions, tomatoes, olives and jalapeños .

Bake them in the oven for 10 minutes or just untill cheese melts. Its important to keep an eye out as the cheese melts quickly and it burns along with chips . Once its out of the oven you can add Coriander, guacamole, avocados and sour cream.

If you are catering for a crowd, you can also serve baked chips with cheese and serve toppings on sides for everyone to pick their own.

Ingredients
  

  • 700 g Corn chips/ Tortilla Chips
  • 1 cup Black beans or Mexican refried beans
  • 2 cups Cheese See notes

Chicken

  • 500 g Chicken (very thinly cut)
  • 1 tsp Paprika
  • 1 tsp Cumin Powder
  • 1 tsp Onion Powder
  • 1 tsp Garlic Powder
  • 1 tsp Salt
  • ½ tsp Crushed Black Pepper
  • 2 tbsp Lemon Juice
  • 2 tbsp Oil

Toppings

  • Sour cream
  • Guacamole
  • jalapeños
  • Olives
  • Coriander
  • Onions Chopped
  • Tomatoes

Instructions
 

  • In a bowl marinate chicken with spices and lemon juice. Allow it to marinate for at least 15 mins.
  • In a pan heat oil and cook chicken. If you are using larger chunks or pieces shred the chicken after cooking.
  • Spread a layer of nachos chip on a tray or baking pan, Followed by chicken, beans and cheese. Repeat and do another layer.
  • Add toppings of your choice except sour cream and avocados or guacamole.
  • Place the tray in the preheated oven for 5 minutes or just untill cheese melts.
  • Add sour cream and guacamole or serve them the side.

Notes

  • The chicken can be cut into very small bit sized pieces or you can use bigger pieces and later shred them after cooking.
  • You can choose any cheese Colby, Monterey jack, cheddar. If you are using Mozzarella combine it with cheddar.
