Moroccan Style Chicken with spices, lemons, olives & vegetables is an easy one pot dinner. The succulent and tender chicken is full of flavour and makes a perfect warm comforting dinner. I tweaked the traditional chicken tagine recipe. The traditional Moroccan dish of meat, braised with spices, garlic, onion, olives, and preserved lemons. Tagine is actually a clay pot with a cone-shaped lid in which the dish is traditionally cooked . You don’t need a tagine to cook this dish. A cast iron pan or Dutch oven works too !

How to make Moroccan Style Chicken

The ingredients for Moroccan Chicken are very simple using pantry staples and vegetables from Fridge. This recipe is quite flexible you can easily tweak it according to your taste.

You will need chicken on the bone, ideally large pieces. You can choose Maryland’s or drumsticks or whole chicken cut in 8 pieces. For vegetables I used capsicum, potatoes and onions. You can also add eggplant, carrots or sweet potatoes. I also used green olives and kalamata olives both.

Begin with preparing spice mix using salt, paprika, turmeric and cumin powder. Rub the spice mix on the chicken. Then sear the chicken in pan, turning on both sides. Add vegetables, olives, chickpeas and pour chicken stock.

Initially cover the pan with foil and cook for 30 minutes. Take the foil off and cook for another 20-30 minutes. Untill chicken is cooked and tender.

Traditionally Moroccan Chicken is garnished with nuts, dried apricots and raisins. You can add them if you like according to your choice.

What to Serve it with.

Moroccan chicken can be served with couscous. You can also try it with rice and serve along with fresh Mediterranean Salad.

Ingredients
  

  • 1 kg Chicken with Bone
  • 1 Potatoe
  • ½ Capsicum
  • 1 Onion
  • 1 cup Chicken Stock
  • 1 tbsp Tomatoe Paste
  • 1 tsp Garlic
  • ½ tsp Ginger
  • Olives
  • Lemon Slices
  • 1 tbsp Olive Oil
  • 1 tsp Salt
  • 1 tsp Paprika
  • 1 tsp Cumin Powder
  • ¼ tsp Turmeric
  • Coriander/Cilantro for garnish

Instructions
 

  • Mix all the spices together and rub on the chicken.
  • Heat oil in the pan and sear chicken on both sides.
  • Add tomatoe paste, ginger and garlic in stock. Pour it over the chicken.
  • Add potatoes, chickpeas, capsicum and onions. Top it with lemon slices.
  • Cover the pan with foil and put in the oven for 30 mins at 200 ° C.
  • Uncover the foil and cook for another 20-30 minutes untill chicken is cooked and tender.
  • Garnish with coriander. Serve with couscous or steamed rice.
