Chickpeas combined with cucumbers, capsicum, creamy avocados and feta tossed in an easy homemade lemon dressing.

This easy salad recipe is so quick and easy. It makes a perfect side dish for almost any meal or a great healthy and filling lunch. Serve it with grilled meat like Air Fryer Tandoori Chicken Drumsticks

Ingredients in Chickpea Salad

This protein packed salad requires chickpeas and some vegetables.

Vegetables

  • Use Lebanese or English cucumbers, you can partially remove skin if you want to but its good with skin as well.
  • You can use grape or cherry tomatoes. I just used Roma tomatoes deseeded and chopped.
  • Any capsicums green, red or yellow bell pepper can be used.
  • Use Spanish onions as they work best for salads.
  • Avocado and feta adds a great creamy buttery texture.

Chickpeas

Chickpeas are also known as garbanzo beans. I used canned chickpeas as they are conveniently available and quicker option.

You can use dried chickpeas too. Soak them and boil them with some salt.

Fresh Herbs

This chickpea salad needs fresh coriander/cilantro. You can substitute parsley if you prefer.

Dressing for Chickpea Salad

The dressing is made with lemon juice from fresh lemon and extra virgin olive oil. I added some salt and cracked pepper and some oregano for some extra flavour.

Just add everything in a jar or empty bottle and shake. You can make some extra and it can be stored in the fridge for a week.

Ingredients
  

  • 400 g Canned Chickpea
  • ½ cup Capsicum
  • 1 Medium Cucumber
  • ¼ cup Red onion Chopped
  • 1 Medium Tomatoe Deseeded and chopped
  • ¼ cup Crumbled Feta Cheese
  • ¼ cup Finely chopped Parsley/coriander
  • 1 Medium Avocado chopped

Dressing

  • 3 tbsp Lemon Juice
  • 2 tbsp Olive Oil
  • ½ tsp Oregano
  • Salt and Pepper to taste

Instructions
 

  • In a bowl add the salad ingredients except Feta cheese.
  • Combine dressing ingredients in a bottle or empty jar and shake until well combined.
  • Pour the dressing over the salad and toss to mix. Sprinkle crumbled feta over and serve immediately.
