A healthy and filling salad made with falafels, salad leaves , chickpeas and tahini salad dressing. If you are looking for lunch to take at work or quick meal or a side, look no further than this delicious Falafel Salad. Its not only great for vegans and vegetarians, but everyone can enjoy this without missing the meat.

The ingridients for Falafel salad are below:

Falafels – they can be store bought or home made. Supermarkets sell ready to eat falafels and fry at home falafels are available too. If you choose to make them from scratch, check out this recipe for Falafels.

Chickpeas – you can use boiled chickpeas or canned ones.

Salad Leaves – I used mixed salad leaves including rocket, corals, baby spinach and chard. Any leafy mix works well.

Capsicum – You can use green, red or both.

Tomatoe – deseeded and chopped. Baby tomatoes are good option too. You can also use sundried tomatoes.

Onion – ideally use spanish onions as its mild in taste and doesnt have over powering taste.

Cucumber – half cucumber chopped.

Salad Dressing

Dressing is the hero of the dish that brings together all the ingredients and give creaminess and tangy flavour to the salad. Just add the ingredients to a jar or empty bottle. Shake to mix and get creamy delicious dressing.

Tahini Paste – tahini or tahina is made from hulled sesame seeds. It is used in hummus and baba ghanoush. Its available in supermarkets and also at Mediterranean/Middle Eastern stores. Recently its been very popular due to its health benefits ( High in vitamins, minerals and antioxidants).

Yoghurt – I like to add yoghurt to the dressing as it balances the flavour and adds creaminess. If you are making vegan version you can completely skip the yoghurt.

Lemon Juice – Freshly squeezed lemon juice, if unavailable you can swap it with bottled lemon juice.

Sumac – is a middle Eastern spice made from dried Sumac Berries. Its is tangy and fragrant spice used in salads and zaatar. Sumac is the only spice we use in this salad.

Olive oil – use either extra virgin or light olive oil or pure olive oil.

Can I Make Falafel Salad ahead ?

The salad ingredients can be mixed and stored in fridge ahead. The dressing can also be prepared and refrigerated. Take the dressing out before you intend to prepare salad as olive oil and tahini paste solidifies in fridge. Add dressing to salad just before serving.

If you are planning to have take this salad to work for lunch, pack salad and dressing separately.

The dressing solidifies when in fridge due to olive oil. Leave it out for few minutes at room temperature.

Once you add dressing to the salad its best to consume the salad immediately as it gets soggy and watery after sometime. That’s why is not good to store leftover salad in the fridge.

Variations

There are so many different things you you can add to this salad. Add quinoa or couscous to make it more filling. I also like to add avocado, if in season. You can also add olives either red or green.

Ingredients
  

  • 8 Falafels
  • 1 cup chickpeas boiled or drained
  • ½ cup capsicum red, green or both
  • 1 small Tomatoe Deseeded and chopped
  • 1 small onion
  • ½ Cucumber Chopped
  • 2 cups Mix green leafy salad
  • ½ Avacado Optional

Tahini Dressing

  • 2 tbsp Tahini Paste
  • 2 tbsp Greek Yoghurt
  • 2 tbsp Lemon Juice
  • 1 tbsp olive oil
  • 1 tbsp Sumac
  • Salt to taste

Instructions
 

  • Add all the salad ingredients in a mixing bowl.
  • In a jar or bottle add dressing ingredients, shake well until combined well.
  • Pour the dressing into salad and toss to mix.
  • Add Falafels and serve.
