Chickpea Salad

Chickpeas combined with cucumbers, capsicum, creamy avocados and feta tossed in an easy homemade lemon dressing.

Ingredients
  

  • 400 g Canned Chickpea
  • ½ cup Capsicum
  • 1 Medium Cucumber
  • ¼ cup Red onion Chopped
  • 1 Medium Tomatoe Deseeded and chopped
  • ¼ cup Crumbled Feta Cheese
  • ¼ cup Finely chopped Parsley/coriander
  • 1 Medium Avocado chopped

Dressing

  • 3 tbsp Lemon Juice
  • 2 tbsp Olive Oil
  • ½ tsp Oregano
  • Salt and Pepper to taste

Instructions
 

  • In a bowl add the salad ingredients except Feta cheese.
  • Combine dressing ingredients in a bottle or empty jar and shake until well combined.
  • Pour the dressing over the salad and toss to mix. Sprinkle crumbled feta over and serve immediately.
