Vegetable Fried Rice

It’s quick and easy Vegetable Fried rice, it only takes 15 minutes to make, customize with your favorite add-ins, and it’s so flavorful and delicious!

A quick no fuss recipe and equally good as your favourite Chinese Restaurants. All you need is handful of ingredients, and you will have delicious rice ready. Enjoy it on their own or with your favourite Asian stir fry curry.

The best part is that this recipe is completely adaptable. You can add meat and vegetables according to your choice.

VEGETABLE FRIED RICE INGREDIENTS:

To make this fried rice recipe, you will need following ingredients:

  • Cooked rice: Any kind of white or brown rice preferably day old.
  • Eggs: add great flavor, texture and protein.
  • Carrots, onions, green onions, corn and peas: Fresh or frozen both works well.
  • Garlic: Freshly chopped.
  • Soy sauce: I used soya sauce and some Dark soya sauce as well.
  • Oyster sauce: it adds rich deep flavour to the fried rice.
  • Chilli Sauce/Sirracha: I like some spice in my fried rice, you can omit this if you don’t like it spicy.
  • Sesame oil: Works best for stir fry as it has high burning point. If unavailable use any vegetable oil.
  • Spices: I used some white pepper and black pepper.

HOW TO MAKE FRIED RICE:

Vegetable fried rice is a three-process step. Keep everything ready, vegetables should be chopped, mix all sauce in a bowl as well. Once wok is on everything moves in quickly so its important to have everything ready at hand.

  1. Sauté veggies and garlic: heat oil and fry garlic and sauté the onions, carrots, peas and corn until soft and cooked through.
  2. Add Egg: Move the vegetables on the side and scramble eggs in the same work.
  3. Stir fry rice: Add rice along with all the sauces. Mix until its combined and rice are coated with sauces. Add green onions and taste test.

FRIED RICE VARIATIONS:

The best part of fried rice is that you can customize it according to your choice .

  • Add Meat of your choice: You can add small chicken pieces and fry them with garlic before adding any vegetables. If you have any precooked or leftover chicken that can be used as well. Similarly, you can also add ground beef or shrimps
  • For Vegan option you can add Tofu.
  • Vegetables like broccoli, baby corn or capsicum too.

Ingredients
  

  • 3 cups Cooked Cold Rice (See Notes)
  • 1 small Sliced Onion
  • 4 Garlic Cloves finely chopped
  • ½ cup Diced Carrots
  • ½ cup Peas
  • ¼ cup Corn
  • 3 Eggs
  • 1 cup Spring Onions (Shallots)
  • 3 tbsp Sesame Oil or Vegetable oil

Sauce

  • 1 tbsp Soya Sauce
  • 1 tbsp Dark Soya Sauce
  • 1 tbsp Oyster Sauce
  • 1 tbsp Chilli sauce or Sriracha Sauce Optional
  • ¼ tsp Black Pepper powder
  • ¼ tsp White Pepper powder

Instructions
 

  • Heat about 2 tbsp oil in a wok or skillet over high heat until smoking.
  • Add garlic and cook for half a minute. Add onions and all the vegetables. Fry for 2 minutes.
  • Move the vegetables to side of the wok and add remaining 1 tbsp of oil on empty side. Pour in the lightly whisked eggs and scramble them until fully cooked. Then mix them with vegetables
  • Add rice and all the sauce ingredients. Toss to combine until rice coats all the sauce. Add spring onions and mix.
  • Remove from heat and serve immediately.
