Why You’ll Love This Recipe
Versatile serving options – pair with rice, roasted veggies, salad, or even tuck into wraps for an easy lunch.
Simple ingredients, big flavour – all you need is chicken, lemon, garlic, and a few pantry staples.
Crispy skin without frying – roasting in the oven gives you perfectly golden, crispy drumsticks with less oil.
Meal-prep friendly – marinate ahead of time and just pop them in the oven when ready to eat.
Family approved – mild enough for kids, but bold enough for adults to enjoy.
Ingredients You’ll Need
- Chicken – I used bone-in chicken drumsticks with skin on for maximum flavour and crisp texture. You can swap with thighs or mixed cuts if you prefer.
- Butter – Unsalted melted butter gives richness and really enhances that garlicky flavour.
- Olive Oil – Extra virgin olive oil balances the butter and helps the chicken crisp up beautifully.
- Garlic – Fresh garlic is a must! Smash the cloves in a mortar and pestle (old-school style) for the most aroma.
- Lemon – Freshly squeezed juice adds brightness and cuts through the richness.
- Smoked Paprika – Adds a subtle smokiness and gorgeous colour. Regular paprika works fine too.
- Oregano – Dried oregano gives a nice herby base; you can use fresh oregano if you have it.
- Sweet Chilli Sauce – Helps the chicken caramelise while adding a touch of sweetness and spice. Honey makes a great substitute.
- Seasoning – Sea salt and freshly cracked black pepper, to taste.

How To Make Lemon Garlic Roasted Drumsticks
1. Marinate the chicken
Place the drumsticks in a large mixing bowl. Add melted butter, olive oil, oregano, smoked paprika, garlic, lemon juice, sweet chilli sauce, salt, and black pepper. Toss well so the marinade coats every piece, rubbing it in for maximum flavour. Cover and marinate for at least 30 minutes (a few hours or overnight gives even better results).
2. Roast until golden
Preheat your oven to 230°C (450°F). Arrange the drumsticks in a single layer in a roasting pan or casserole dish. Roast for about 40–45 minutes, turning once halfway through to ensure even cooking.
3. Crisp them up (optional)
For extra colour and crispy skin, switch on the top grill/broiler for the last 3–5 minutes. Keep an eye on them so they don’t burn.

Serving Suggestion
These lemon garlic roasted drumsticks pair beautifully with steamed basmati rice and a simple garden salad for a balanced meal.
If you want something heartier, add a side of crispy roasted potatoes or buttery mashed potatoes.
They also work great as a crowd-pleasing appetizer at family dinners, picnics, or barbecues — just serve them hot straight from the oven with lemon wedges on the side.
