Doner kebab originated in Turkey but to say that it is a dish truly embraced by the world wouldn’t be wrong. So many cultures and countries have taken them and made them their own by making little variations. But the main idea remains the same, meat is cooked on a vertical rotisserie and its shaved off and served in a pita bread or with Rice Pilaf along with salad etc.

HOW TO MAKE TURKISH CHICKEN DONER KEBAB AT HOME ?

While its impossible to create the giant sized meat rotisserie, we can definitely replicate and create doner kebab at home. They are healthy, you know its 100 % meat and its fresh. It is completely doable and worth it . The only point – there is a wait of around 24 hrs between you and the scrumptious kebab. In this recipe I will share with you how to serve the Turkish Chicken Doner kebabs in 2 ways. The ingredients for making Chicken Doner Kebabs are below:

Meat : I used chicken. Chicken breast or thigh both work well. It is sliced thinly vertically.

Marinade: Marinate Chicken in onion juice, yoghurt, tomato paste, salt, black pepper, paprika, oregano and butter.

To make onion juice, process onion in food processor or stick blender. Strain it. The onion water makes meat tender.

Wrap the marinated meat it in a cling wrap in a log shape. Cover the meat with foil. Allow it to freeze for at least 24 hrs. Slice it and toss it in the pan.

SALAD Prepare some salad with onions, parsley, tomatoes and cucumber. You can dress it with lemon juice and Sumac (Middle Eastern spice made from Sumac Berries)

GARLIC SAUCE – Mix yoghurt, garlic, grated cucumber, salt and lemon.

Chilli sauce or siracha sauce go best along with doner kebabs. You can choose your own sauce if you prefer to keep the spice level down.

HOW TO SERVE CHICKEN DONER KEBAB

There are mainly two ways to serve doner kebab – with lavash or pita bread and Turkish rice pilaf.

Traditionally Lavash bread is Turkish bread which is like a flat bread. Its available at Middle Eastern stores. Alternatively you can use any flat bread, pita or Lebanese bread too. Wrap the meat in it along with garlic sauce, and salad made with lettuce, tomatoes, onion, cucumber and parsley. You can also serve Hummus, tabouli or Fattoush.

Turkish rice pilaf is made with rice, vermicelli and some butter. Serve the rice along with the meat and some salad on the side.

Ingredients
  

  • 1 kg Chicken fillets See Notes
  • 1 Medium Onion
  • 3 tbsp Yoghurt
  • 2 tbsp Tomatoe Paste
  • 2 tbsp Paprika
  • 1 tbsp Cumin Powder
  • 1 tbsp Salt
  • ½ tsp Black Pepper powder
  • 1 tbsp Melted Butter
  • 2 tbsp Oil or Butter for grilling
  • Pita Bread

Garlic Sauce

  • 1 Cup Yoghurt
  • ½ Cucumber Grated
  • 1 tsp Garlic Paste
  • ¼ tsp Salt
  • 1 tsp Lemon Juice

Salad

  • 1 Onion Sliced
  • 1 Cucumber Cubed
  • 1 Tomatoe Deseeded and cut in cubed.
  • 1 tbsp Parsley chopped
  • 2 tbsp Lemon Juice
  • 1 tbsp Sumac
  • Lettuce

Turkish Rice Pilaf

  • 1 cup Rice (Preferably Basamati)
  • ½ cup Vermicelli
  • 1 tbsp Oil
  • 1 tbsp Butter
  • 1 tsp Salt
  • 2 cups Water See Notes

Instructions
 

Prepare Chicken

  • Blend onion in a blender or with a stick blender. Strain the liquid to get around ½ cup of onion water.
  • Add yoghurt, tomatoe paste, Salt, paprika, cumin powder, pepper and butter and mix well.
  • Cut chicken into thin fillets by cutting vertically and marinate it in the marinade prepared. Allow it to be marinated for 3-4 hrs or preferably overnight.
  • Put chicken on a cling wrap by overlapping and then roll it into a log shape. Wrap it in foil and put in the freezer for 24 hrs. It should be frozen and hard.
  • Take chicken out and Cut thin slices but don't let meat to get completely defrosted. The first few slices are hard to cut but as you keep cutting it gets easier.
  • Heat oil/butter in a pan and grill chicken while turning it around.

Garlic Sauce

  • Mix all Ingredients together.

Salad

  • Mix all the ingredients except lettuce. Add lemon juice and sumac and mix.

To Assemble

  • Heat bread slightly, in the same pan chicken was prepared.
  • Put chicken on the bread, add lettuce and salad. Drizzle yoghurt sauce and chilli sauce ( or any sauce you like). And wrap it.

Turkish Rice Pilaf

  • Wash and rinse rice with water. Soak them for 15-20 mins.
  • In a pot heat oil and butter, once hot fry vermicelli for few minutes until it slightly changes colour.
  • Add rice and fry them for at least 5 minutes
  • Add Water, when the water starts to simmer add butter and salt. Reduce heat to low. Cover and cook for at least 15-20 minutes until the rice are done.,

Notes

  • You can use either breast or thigh fillets or mix both together.
  • This is quantity of water required for basmati rice. If using any other type of rice use water according to instructions given.
