Chicken Malai Boti

Creamy, Tender melt in the mouth grilled chicken skewers, marinated and then grilled to perfection.“Malai’ means cream and ‘boti’ means a piece of chicken. This grilled chicken is mildly spiced but is full of flavour. In most of the restaurants its served as entrée or appetizer but it actually can be served as main as well.

Ingredients for Chicken Malai Boti

The ingredients for chicken malai boti are as below:

  • Chicken – Boneless chicken, you can use breast fillet or thigh fillets. Cut them into 2 inch square pieces.
  • Garlic & Ginger – Use fresh garlic and ginger, it adds a great flavour to the marinade as compared to bottled paste.
  • Yoghurt – use natural set yoghurt or Greek Yoghurt.
  • Coriander and Mint – These 2 herbs add aroma to marinade and gives a colour to the chicken
  • Lemon Juice – freshly squeezed juice preferably , otherwise bottled juice can be used too.
  • Green Chillies – green cayenne peppers.
  • Cashews – help add creaminess to the chicken. You can also use almonds ( skinless).
  • Spices – You will need cumin powder, coriander powder, black pepper powder, white pepper and garam masala.

How to Make Chicken Malai Boti

First make a paste from garlic, ginger, coriander, mint, lemon juice, green chilli and cashews. Use a grinder or blender to make a smooth paste.

Add the green marinade to chciken, along with spices and yoghurt. Mix and marinate for atleast 2-3 hours. It can also be marinated upto 24 hrs ahead. Thread the chicken pieces on to skewers. The chicken malai boti skewers can be grilled in a pan or bbq and also over charcoal. You can also grill it in air fryer.

I like to finish it off by infusing charcoal smoke so it gets that chargrilled aroma.

Serving Suggestion

Chicken malai boti can be served with Mint Chutney or Yoghurt, sliced onions, cucumber and tomatoes. You eat it with naan bread or make a paratha roll using store bought parathas. You can also make a wrap in flat bread.

Ingredients
  

  • 800 g Boneless Chicken ( Cut into 2 inch squares)
  • ½ cup Yoghurt
  • 3-4 Cloves Garlic
  • 2 inch Piece of Ginger
  • 2 tbsp Lemon Juice
  • 1 cup Coriander
  • ½ cup Mint Leaves
  • 5-6 Cashews ( Alt Almonds)
  • 2-3 Green Chillies
  • Oil for Grilling

Spices

  • 1 tsp Cumin Powder
  • 1 tsp Coriander Powder
  • ½ tsp Black Pepper Powder
  • ¼ tsp White Pepper powder
  • ½ tsp Garam Masala
  • tsp Salt

Instructions
 

  • In a blender or grinder put mint, coriander, chillies, garlic, ginger, lemon juice and cashews. Process untill a smooth paste is formed.
  • Add the green paste to chicken along with yoghurt and spices. Mix well and cover. Allow it to marinate for couple of hrs atleast.
  • Thread the pieces into metal or wooden skewers. Heat a grill pan and drizzle some oil. Cook chicken for 4-5 mins on each side. Brush a little bit of oil to prevent chicken from drying.
    You can also cook chicken in airfryer or oven. Bake them for 15 minutes while turning them over once.
  • To give chicken skewers a smoky charcoal flavour, heat a piece of charcoal on fire. Put chicken in pot or dish. Put a little piece of folded aluminum foil in the middle. Put heated coal piece on foil and drizzle a drop of oil. Cover the dish or pot with a lid for 5 minutes. Discard the charcoal after this.
  • Serve it along with mint yoghurt, store bought parathas or wraps/flat bread. Garnish with fresh coriander, lemon wedges and onion rings.
