Ingredients for Pineapple Delight

  • Biscuits – So basically you need any plain biscuits which will be used for crumb. You can use digestives or graham crackers. In Australia they are are known as Granita Biscuits. Biscuits with caramel taste like Biscoff can also be used.
  • Canned Pineapple – I used pineapple chunks, you can also use crushed pineapple but i think chucks work better for this recipe.
  • Cream – suitable for whipping.
  • Butter – a little bit of unsalted melted butter to add to crumbs.

Layering Up Pineapple Delight

As with all the non bake desserts all you have to do assemble them ! To assemble pineapple delight you can either choose a large serving dish or individual serving glasses. Its is also ideal for making little dessert cups for parties etc.

Mix crumbs and butter together so it gets crumbly. Layer some crumb in the glass. Drizzle some pineapple juice over and add a layer of pineapple chunks. Next comes in the cream, its easy if you use it in a piping bag or you can just spoon it in. Repeat again with crumbs, pineapple and cream. Depending on depth of your serving dish or glass you can add another layer too.

Allow the pineapple delight to refrigerate for atleast 3-4 hours before serving.

It’s best to stick with canned crushed pineapple, as fresh pineapple can cause the cream to curdle due to its natural enzymes.

For tropical twist add toasted coconut flakes or shredded cocconut.If you like a nutty crunch add toasted almonds or pistachios.

Can you make this dessert ahead?

Pineapple delight is perfect to make ahead. Its can be made 24 hours ahead and refrigerated. It taste better when chilled for longer time.

Ingredients
  

  • 1 Pack Plain Biscuits See Notes
  • 500 g Canned Pineapple in Syrup See Notes
  • 500 ml Cream
  • 2 tbsp Melted Butter
  • 2 tbsp Icing/Powdered Sugar

Instructions
 

  • Put biscuits in a zip lock bag and crush them. You can also do this in food processor but avoid making it into fine powder.
  • Put biscuit crumb in a bowl and add melted butter. Gently rub it with fingers to mix and make it crumbly.
  • In a bowl whip the cream using electric beaters. Add powdered/icing sugar and whip until soft peaks form.
  • Drain the canned pineapple chunks reserving syrup as well.
  • To Assemble the dessert you can use a serving dish or individual cups/glasses. Layer some biscuits and press them lightly.
  • Drizzle some pineapple juice over the biscuits and layer pineapple chunks.
  • Add a layer of whipped cream. If you are assembling it in glasses, its easier to use a piping bag.
  • Repeat another layer with biscuits, pineapple and cream. Sprinkle some biscuit crumb over.
  • Refrigerate for at least 3-4 hrs. Serve it chilled.

Notes

  • Any plain biscuits can be used for crumb. You can use digestives or graham crackers. I used Granita Biscuits.
  • You can also use crushed pineapple in syrup.
