Blend all the sauce ingredients in a blender until thick paste is formed.
Add half of the marinade to the chicken, mix well and marinate for at least 2-3 hrs.
Heat a grill pan and sprinkle cooking oil. Cook chicken on medium low heat , 10 minutes on each side. To check if its done, slightly cut the thickest part of the chicken, the juices should run clear and meat should no longer be pink inside.
Add the remaining sauce to a pan with little oil. Cook until the sauce starts to simmer. Serve it along with the chicken.
Notes
You can use chicken drumsticks, chicken Maryland or whole chicken and even wings. If you are using whole chicken, its better to Butterfly it ( remove the back and make it flat), this helps even cooking and char without turning it over during the cooking. Traditionally its made with skin on, but if you don't prefer it can be removed.
