Fluffy Pancakes
Simple and Easy home made fluffy pancakes. No buttermilk or bicarb !

- 2 cups 300 g Plain Flour
- 3 tsp Baking Powder
- 1¾ cup 435 ml Milk
- 1 Egg
- ¼ cup 55 g Caster Sugar
- 1 tsp Vanilla Essence (Optional)
- Butter for cooking
In a bowl combine flour and baking powder and mix.
Add milk and egg, mix it using a whisk. The mixture doesn't have to be smooth but it shouldn't be lumpy.
Heat a non stick pan untill hot, turn the heat to medium low. Put a teaspoon of butter and spread it around. Pour ¼ cup of batter , you can use ice cream scoop too.
Once the bubbles start to form, flip the pancake and cook untill the other side is golden too.
Repeat the process with remaining batter.
Serve warm with your favourite toppings !
