Pick Leaves from spinach discarding the stems. Chop the leaves thinly. Wash it thoroughly, rinsing water couple of times ensuring there is no sand remaining in the leaves.
Put Spinach in a pot on medium low heat. The spinach will begin to soften and release water. Cook untill leaves are completely soft and little water is left.
Take the spinach out and blend it using it hand stick blender or chopper. Make sure not to over process and make it liquid.
In a pot heat oil and fry onions until transparent. Add garlic and fry for half a minute. Add turmeric, red chilli powder, cumin powder and coriander powder. Mix and add half a cup of water. Cover and cook on low heat for 15 minutes.
Add spinach and fry it for around 10 minutes continuously stirring it. Add salt. Once oil starts to appear on the top, add milk and cook for 15 -20 minutes on a low heat.
In a frying pan add 2 tbsp of oil and fry paneer cubes turning them, until they are golden on all sides.
Add half of the paneer in the spinach and the remaining can be garnished on top.
