Chicken Chow Mein
Tender pieces of chicken breast with combination of chopped vegetables like carrots, cabbage, green onions and chewy noodles coated in sauce. Quick & Easy !

- 200 g boneless skinless chicken breast
- 450 g Chow Mein Noodles See Notes
- 1 cup green cabbage thinly sliced
- 1 cup Carrot Julienned
- 1 cup Green Onion chopped in 2 inch pieces
- ½ cup Capsicum
- 1 tsp Chopped Garlic
- 1 tbsp Oil
Sauce
- 2 tbsp Soya Sauce
- 2 tbsp Oyster Sauce
- 1 tsp Vinegar
- 1 tbsp Brown Sugar
- ½ tsp White Pepper
- 1 tbsp Cornflour
Mix all the sauce ingredients and put aside.
Prepare noodles according to the package instructions.
Heat oil in a wok. Add garlic and fry for a minute. Add chicken and fry untill it changes colour.
Add cabbage, carrots and capsicum and toss them. Add noodles and pour prepared sauce. Toss and combine. Lastly add spring onions.
Serve immediately.
- Use thin noodles. Alternatives to chow mein noodles are egg noodles, instant noodles or even thin spaghetti.
